Chicken Salad With Asian Dressing

Chicken lettuce cups are so fun to look at, so pretty, and they are fun to eat and very very tasty. You are going to love this recipe and make it over and over.
Ingredients -
4 Tablespoons Soy Sauce
6 Tablespoons Rice Vinegar
3 Tablespoons Toasted Sesame Oil (divided)
1/2 Pound Steamed or Dried Chinese Noodles
1 1/2 Pound Boneless Rotisserie Chicken Breast
4 Teaspoons Minced Garlic
2 Red Bell Peppers (sliced)
1 Cup Shiitake (sliced)
1 Cup Portobello (sliced)
Salt and freshly ground pepper
Washed, ready-to-eat romaine lettuce (about 6 cups)
4 Scallions (sliced)
4 Tablespoons Cashews (chopped)
 
Preparation:

1. Place a medium saucepan filled with water on high heat.

2. Mix soy sauce, vinegar and 1 tablespoon sesame oil.

3. When water boils, add noodles. Cook 2 minutes, then drain.

4. Run cold water through them. Set aside.

5. Heat remaining 1/2 tablespoon sesame oil in a wok or non-stick skillet over high heat.

6. Add chicken, garlic, red pepper and mushrooms. Stir fry 1 to 2 minutes.

7. Remove pan from heat and add noodles, sauce mixture, and salt and pepper to taste.

8. Toss well.

9. Divide lettuce between 2 dinner plates.

10. Spoon noodle mixture over lettuce.

11. Sprinkle with scallions and cashews.

Soy Sauce
Try using soy sauce in place of salt for your recipes. It puts a different spin on the flavors and even though it adds an Asian influence you might actually like it.
