Coconut Pineapple Jello Salad

This recipe is a fun one for the kids. It’s super colorful and fun to eat. I make it during the holidays for all the little ones. Don’t tell anyone but I love it too.
Ingredients -
1 Cream Cheese (8 ounces)
1 Small package Lemon Jello
1 Tub Cool Whip (8 ounce)
1 Can Crushed Pineapple (20 ounce, well drained)
1 Small Jar Maraschino Cherries (sliced in half)
1 Can Mandarin Oranges
3/4 Cup Flaked Coconut
2 Ice Cubes
 
Preparation:

1. Boil one cup of water.

2. Whip the cream cheese until fluffy.

3. Add the pineapple.

4. Mix the Jello until completely dissolved with the boiling water.

5. Add ice cubes and stir.

6. Add to the cream cheese and pineapple mixture.

7. Stir in the maraschino cherries, mandarin oranges and coconut.

8. Refrigerate until partially set.

9. Stir in the Cool Whip.

10. Refrigerate at least another hour.

11. Serve and enjoy.

 



Cooking Tip
Coconut
You can adjust the amount of coconut to your liking. Sometimes I only use 1/4 cup and you don’t have to use Lemon jello. All flavors are good.
