1. Separate the lettuce leaves and pick out the pretty ones.
2. Plate the beds of lettuce on 6 individual serving dishes.
3. Put and even amount of grapefruit sections and crab meat over lettuce.
4. Make it look pretty.
5. In small bowl, combine grapefruit peel, shallot, white wine vinegar, balsamic vinegar and salt.
6. Whisk in the extra virgin olive oil slowly.
7. Taste for acid and salt and add more if too bland.
8. Stir to blend before using.
9. Drizzle about 1 tablespoon Grapefruit Dressing over each serving.
